One of my favorite quick and easy meals to make, is Turkey Balls of any flavor! They are great as a sandwich, over rice, pasta, quinoa, or by themselves.

These Asian Inspired Turkey Meatballs are usually my go to ground turkey dinner, but decided to switch up the flavor profile with something a bit more “summery” .
If you love hummus, you will devour these balls. ((Go Ahead and laugh))


Lemon Tahini Vinaigrette:
6-8 cloves of garlic sautéed in light olive oil (or a whole head, you do you)
1 Lemon juiced
1/2 cup Tahini
2 Tbl Honey
1 tsp Cumin
1/2 tsp Curry
1 tsp Garlic Powder
1 tsp Onion Powder
1/4 cup- 1/2 cup of Water to thin out
Whisk together - set aside

Tahini Turkey Balls:
Ingredients::
1 Lb Ground Turkey
1/2 Onion Grated
1 Carrot Grated
2 Tbl Tahini
1/4 C Panko
1 Egg
6-8 Cloves of Sautéed Garlic ((I sautee my garlic first and let it cool before adding to my mix- I like the flavor better))
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Cumin
1/2 tsp Curry
salt & pepper
If you have time, let your meat marinade in the fridge for at least an hour. When ready, roll your balls- I like to use an Ice cream scoop to keep them
all uniform. ((I then set in the fridge again just to firm up after rolling ))
To Cook:
Bake in 400 degree oven for 12-18 minutes until the center reaches 165

These are totally optional, but while your meatballs are setting, whip up some crunchy chickpeas! These are awesome as a light snack, a salad topper or just right out of the airfryer!

Whisk together
Olive oil, cinnamon, ginger, curry, garlic, cumin, onion, salt, vanilla and a touch of date syrup.
Toss with two cans of drained chickpeas ((because one can is never enough!))
Airfy until crunchy ((400 degrees, stirring every 5 minutes until crunchy))

Serve Meatballs over Quinoa & Roasted Cauliflower; top with Lemon Tahini Vinaigrette, Crunchy Chickpeas, chopped onion - and a little piece of garlic naan ((parsley would be great too but I didn’t have any))!!!
Even better the second day! I don’t know how some people hate leftovers! They are my fave! ((And these Culture Pop Sodas are Ahhh-mazing!))
