Some More S'mores, Please

S'mores Rice Crispies non bake dessert

My favorite dessert flavor is S'mores, hands down. If I could find a dairy-free Smores Ice cream, I would be in heaven. For now, S'mores Crispies will do.


Cascadian Farm Cinnamon Crunch whole grain cereal was on sale at Shaw’s last week. I knew they would go great with the bag of mini marshmallows I had sitting in my cupboard.

I really did not measure anything for this recipe. It is so easy; you really cannot mess it up.

This can also be made in a microwave; but mine is my bread cabinet, so a nonstick pot on the stove works simply fine.

S'mores Crispies

Ingredients:

  • 1 small bag of marshmallows about 1/3 cup set aside

  • 2 Tbl butter

  • 2 Tbl Coconut oil

  • ½ C Dark Chocolate chips

  • Mini Chips for sprinkling on top

  • 8 oz Cinnamon Crunch Cereal (Almost a full bag, there was about a cup or so left from a full box)

Directions:

  • Set broiler to Low

  • Sprinkle 1/3 C Marshmallows on a foil lined cookie sheet – I spray mine so it will not stick – and pop in the oven

  • Check frequently, this may burn extremely fast

  • Melt butter and coconut oil over medium heat in a nonstick pot

  • Add marshmallows, break apart and melt into oil

  • Wipe butter in a glass bowl to prevent from sticking

  • Add Cinnamon Cereal to bowl

  • Add Melted mixture

  • Let cool a little and add your dark chocolate chips – You can add right away, however they will melt. Mix in while it is still pliable.

  • Transfer to some parchment, sprinkle with broiled marshmallows and mini chocolate chips. (You can do this in a pan; but I just did it right on the countertop, then wrapped them up and put in the fridge)

  • Cut into pieces or just start ripping off chunks 😊

10/10 recommend adding marshmallows and chocolate to your cereal

(Maybe pair with some fruit if you are thinking of having it for breakfast)
