Perfectly Pressed Panini

A sandwich should have some element of Wow. Whether it is fresh baked bread ((won’t find that here)), a roasted vegetable, Panko fried eggplant ((mhmmm)), perfectly seasoned and roasted meat, or an over-the-top sauce or shmear. Like a salad, I love different tastes and textures in my sandwich, usually something that needs to be eaten with a fork by the end of it because it has fallen apart.

I have posted before, but Sandwich Nights make for the easiest dinner. This week I went with Roast Beef Panini with fresh Horseradish & Garlic Aioli. I sautéed mushrooms with freshly grated horseradish and garlic as well, chefs kiss!


The best panini bread I have found is the Naan from #Aldi , I prefer the roasted garlic, because garlic is everything – I use probably two heads a day while cooking. I spend most my prep time peeling garlic, seriously.

Garlic Aioli Ingredients:

  • 1 Tbl light oil

  • 4-8 cloves of garlic finely minced

  • ½“ Nub of horseradish finely grated

  • 1 tsp Dried or 1 Tbl fresh Parsley

  • ½ C Mayo

Directions:

  • Add oil to small sauté pan

  • When hot, add garlic and grated horseradish

  • Sauté until fragrant , the garlic and horseradish should be soft

  • Sprinkle in fresh or dried parsley

  • Cool before adding to mayo

  • Mix with mayo and transfer to fridge

Garlicky Mushrooms Ingredients:

  • 1 Tbl light oil

  • 4-6 cloves of garlic minced

  • ½” Nub of horseradish finely grated

  • 8-10 oz white or baby bella mushrooms thinly sliced

  • Salt & Fresh ground Pepper

Directions:

  • Sauté garlic and horseradish in oil until translucent

  • Add mushrooms, sauté

  • Once cooked, season with salt and pepper

Panini Ingredients:

  • 2 slices of garlic Naan (For three paninis I use two pieces of Naan)

  • Thinly slice roast beef

  • American cheese

  • Raw red onions

  • Shredded Romaine lettuce or Spinach leaves

  • Cooled Horseradish-garlic Aioli

  • Sautéed Mushrooms

  • Butter for grilling

Directions:

  • Either using a panini press or grilling on a cast iron, build your sandwich

  • Cheese on both sides, fresh onion, mushrooms and roast beef

  • Add butter to the pan or press

  • Grill until melty! Be careful not to burn if using a cast iron ((This may have happened to us and I had to eat my Sammy open faced because I scorched half the panini!))

  • Once your Panini is perfectly pressed ((say that ten times fast!!)) Remove from press, Open and add your Aioli & greens, squish together and Enjoy!!
