These cookies are super easy to make, and ridiculously hard to mess up. I will make a batch in the morning; H and I will snack on them until dinner time. You can add whatever flavors, or mix-ins you crave. Simple banana chocolate chip is my favorite, but the possibilities are endless.
Cherry Banana Chocolate Chunk Breakfast Cookies ((Vegan and Gluten Free – if using GF Oats))
Ingredients:
3 Medium Bananas Mashed
2 Cups Gluten Free Oats ((Quick Cooking works best for this recipe- if you have Thick Cut, let batter sit for an hour before baking)) 1 Tbl Chia Seeds
1 Tbl Flax Seeds
¼ Cup Warm Water
((You can also substitute and Egg if not Vegan))
1 tsp Vanilla
1tsp Cinnamon
1 Tbl Coconut Flour
1 Tbl Coconut milk
¼ Cup Dried Cherries – Chopped
½ Cup Dark Chocolate Chips
((I really don’t measure anything- if the batter looks a little wet, add a sprinkle more of coconut flour; a little dry, a splash more milk))
Directions:
Preheat oven 400 degrees ℉
Make Vegan Egg by mixing Chia, flax and water.
Let sit until thickens
In a medium sized bowl mash bananas
Mix in the Vegan Egg
Add vanilla, whisk
Add in the Dry ingredients, fold together
Add Cherries and Chocolate, fold in
Let batter sit for 5-10 minutes ((If using thick cut, sit longer))
Using an Ice cream scooper place on greased cookie sheet
Bake 15-18 minutes until the tops are golden brown
Let site 5-10 minutes before enjoying!
