Cinnamon Chip French Toast ((Dairy - Free!))

It is the simple things that I easily mess up. Broiling bread – never golden brown, it usually comes out more on the charred side of things. Pancakes? Burned, too think, too runny – I just mess them up every time. But French Toast? Now that is something I can get behind, bread dipped in batter, easy peasy.

The key to delicious French toast is in the quality of ingredients. We found this NEW Cinnamon Chip Brioche bread from Calise and knew it would make the perfect weekend brunch. The bread itself is egg and dairy free – it is perfectly sweetened, light, and fluffy. It is delish by itself, toasted with a little coconut oil ((You could also use butter- but then it would not be dairy free)), coconut sugar and cinnamon. This is the way we have been enjoying the bread, but today we spruced it up to Holiday Noggin French Toast

So Delicious Coconut Nog, pumpkin spice, eggs, a little vanilla paste, and just a touch of Anthony’s Goods coconut sugar round out the ingredients needed to make this simple breakfast.

Ingredients:

  • 2 eggs scrambled

  • ¼ Cup So Delicious Coconut Nog

  • ½ Teaspoon Pumpkin spice

  • ½ Teaspoon of Vanilla Paste

  • 1 Tbl Coconut Sugar

  • 4 Slices Brioche Bread

  • Butter or oil for grilling


  • 1 Banana Sliced

  • 1 Tsp Coconut Oil

  • 1 Tsp Coconut Sugar

  • Sprinkle of Cinnamon

  • Local Honey ((or Maple Syrup)) for drizzling

Directions:

  • Whisk the eggs, Nog, spice, vanilla, and sugar in a shallow bowl ((I use a pie pan – and dip then cook two slices at a time))

  • If you have a griddle, heat the griddle, add oil and battered bread. Grill to golden brown flip & grill.

  • While the toast is a toasting, turn a nonstick pan to med/med-high, add oil, sprinkle sugar, and add sliced bananas, caramelize and sprinkle with cinnamon

  • Serve 2 slices of French toast with half the bananas and a drizzle of honey Yummm!
